Honeyville's Dark Rye Flour is milled from selected stocks of thoroughly cleaned and tempered premium grade rye grain. It contains less gluten (protein) than all-purpose or whole-wheat flour. For that reason, it won't produce a well-risen loaf of bread without the addition of some higher-protein flour. Rye flour is also heavier and darker in color than most other flours, which in turn produces dense loaves. There are several different types of rye flour, the most common of which is medium rye flour. Honeyville Dark Rye Flour is an ideal product for your baking needs.

For a dark rye it is deceptive, not so dark as the blue-black Russian varieties I have used but in the baking of it very dark in appearance, ground not so fine but just coarse enough to have a texture. The mill that provides this rye also mills several other varieties of grind, including a proper pumpernicknel, which is not in fashion these days.Review by Lee David Engdahl (Posted on 6/21/2018)
All in all, attempting to find a proper dark rye is problematic since most outlets see only light rye to suit the custom of the moment.
This is a great tasting dark rye flour. It bakes consistently, has abundant rye aroma and flavor, and makes a beautiful dark bread. I did want to point out that the color of the flour in the product image is not correct, dark rye is a light bluish grey, almost the color of wood ash, and that is what I recieved.Review by Joel (Posted on 4/30/2017)
