Honeyville's Blue Corn has been carefully processed from select food-grade flint corn. Blue corn is simply a variety of flint corn with a dark bluish to red color that, when ground, produces a blue color flour. Blue corn is grown mostly in the Southwestern part of the United States. This corn has a coarser texture and a nuttier flavor than other varieties of corn used for flour.

Far less blue corn is commercially harvested for a variety of reasons. Blue corn is simply not as hearty as dent corn varieties like our White Corn and Yellow Corn. It frequently produces multiple stalks that fall over and cause problems with harvesting equipment and produces a lower yield in general. The primary use for blue corn is to produce masa for blue corn tortillas and for blue corn chips. Tortillas made from blue corn are usually denser than white corn tortillas. Honeyville Blue Corn is an ideal product for long term food storage and emergency preparedness.

Shelf-Life:  Blue Corn will store for 1 year in a sealed 50 pound bag under ideal storage conditions (cool, dry place).

Uses:  Blue Corn can be used in any recipe calling for blue corn, including corn chips and tortillas.

Delicious corn.

This is the first time we eat blue corn tortillas. My family said the tortillas I made with blue corn are delicious, more than yellow and white corn tortillas.

Hopi Blue Corn grows in desert drought

The Hopi have bred this corn for 1000 years to survive on barely any water. [ See You Tube demos on planting it in the sand desert] I got my old seed from Kent S. who went to the Reservation. He ran tests on drying the growing plants. "White Man" corn with zero water turns brown at the tips until soon the whole plant is dead. Hopi Blue corn leaves roll up like a cigar and waits. When watered they unroll and grow again. This can happen 7 times before the corn finally does poorly. One has to harvest it different. Kent planted several acres. They ran a corn harvester into it and it jammed up. There must be a way to harvest it. When it was a couple years old I got 60+ percent seeds growing. [ 60 out of 100 seeds]
After 20 years in my basement I got 5 % germination. Now after 30 years I get about 1% germination.
This is the ultimate food storage grain. We are getting it to Africa where a drought is deadly.

Wish they had Alkali Processed Flour

it would be wonderful if they provided this item in as much variability as yellow and white corn, and even better if they pre-treated it with Alkali to make it properly digestible.

The flavor is wonderful, but the health is hardly absorbed if not processed correctly and it is certainly rough on a hand mill to grind through 50+ pounds of it.

Beautiful Corn

My Blue corn arrived today. It is beautiful, clean and fresh. I packed it in empty bucket that I already had. Then I cut out labels from bag and taped them on the side of the bucket. I used to buy this corn when we lived in New Mexico, so I don't have to try it to know that it will be (is) delicious.

Great for Blue Tortillas

My family bought 200 lbs of this for our long-term food storage. It's flint corn so it needs to be processed with alkalai (nixtamalized with calcium Hydroxide) before your body can absorb the nutrients. Most people don't realize that unprocessed corn is exceedingly nutrition deficient. Nixtamalized corn however is one of the healthiest things you can eat. I use this product to make masa for blue corn tortillas. They taste great! Much better than what you would buy at the store or make from Maseca. Blue corn is about 20% higher in protein than yellow corn and is lower in carbohydrates. It's also much less likely to be GMO if you care about that sort of thing. I am very pleased with my purchase. I wll probably buy more in the future for the purpose of rotating my food storage.
