The Wüsthof Universal Knife Sharpener is a great cutlery tool for every professional chef and cooking enthusiast. Wüsthof knives are known for their outstanding sharpness and this sharpener goes hand in hand with them. By honing and sharpening the knives yourself, you can maintain that sharpness for a lifetime of use. The universal sharpener has both a standard 2 stage setting and an Asian knife 2 stage setting, so you can sharpen any knife in your drawer. There are two ceramic wheels set at the optimum angle for sharpening your knives. It can also be used for serrated and scalloped edges.
With the soft grip handle and easy to use design, you will love having pristine, sharp knives year round for every occasion. If you're looking for a more basic sharpener, try the Wüsthof 2-Stage Knife Sharpener
Directions: Place sharpener on a flat work surface. Hold the sharpener with one hand and the knife handle with the other. Insert knife blade fully into the slot at a 90° angle to the sharpener. Apply moderate downward pressure on the blade while pulling the knife toward you through the appropriate notch. Repeat this action, always pulling the blade from heel to tip (never back and forth) through either the carbide or the ceramic notch.
Note: The first stage carbide (coarse) sharpens dull edges. The second stage ceramic (fine) provides a polished, razor sharp edge. A reasonably sharp knife may only require this light honing.
Care & Use: Always clean your sharpener after use. Clean with a damp cloth or mild brush, wipe dry. Do not rinse with water.
