I mistook this for whole wheat bread flour, but it really doesn't work to that end. There's just not enough protein and it seems capable of absorbing huge amounts of water while still producing a sticky dough. Perhaps it performs miracles for pastry? I have used whole wheat pastry flour in the past in addition to many other various flours and understand gluten development. However, the caliber of flour is not good! While using this in probably about 10 recipes with very horrendous results I have decided to simply feed the flour to my sour to get rid of it. We tried this from a health food store and loved it. Then I saw it on here and compared the price wow! Almost 1/2 the price- and with $5 shipping it can't be beat. We use it in everything now and we can hardly tell the difference between this and the white flour. It fills you up more as well.
