This buckwheat flour is fantastic. I'm allergic to wheat and learned to make a lot of great banana breads flat breads pancakes muffins with this flour. It took a while to use up a 50 pound bag but I'm soon to buy more! I stored it in a food-grade bucket with oxygen absorbers broken down into small bags for ease of use in the kitchen.
