Questionable texture

This coconut flour is much grainier than other brands we have tried. I ordered the 22 lb. bag, and if you look closely in the pictures you can even see that the "bulk" flour doesn't look the same. In the first 5 lb. bag picture it looks soft and clumpy as coconut flour should, but in the big scoop and the second 5 lb. picture it looks more like sand. The sand is what I received, and it does not absorb liquid the same way in recipes. It's almost like it's freeze-dried. For someone who has never baked with coconut flour before, it's still far better than most traditional flours. But when comparing coconut flour to coconut flour, this one is inferior.

Awesome product

I couldn't give all 5s because of value. I don't bake a lot because I'd eat a lot. I do trust Honeyville products and business ethics though. Was the transaction flawless? No. I ordered coconut flour and received oat fiber but they made it right quickly. My only critique would be that their nut flours were in smaller quantities. I can't possibly use up 4-5 lbs of product in 3-6 months. I do have stored in air tight containers and stored in fridge and freezer bu now I've lost precious space there. The 3-6 months was under ideal conditions. Does anyone know how to tell if they do bad? Would rather order smaller amounts more often. My local whole foods store does sell smaller bags but they're not Honeyville.

Best Coconut Flour

This has been a staple in our house for some time now and always will be. This product yields the best tasting paleo baked goods, waffles, pancakes, etc. Great taste and one bag will last a long time. I always keep a few in my fridge!

Great for healthy baking!

I tried a 5 lb bag to start exerimenting with gluten-free, low carb baking and have to say I'm very impressed with the results. Coconut flour is very dry so you'll find that recipes based on it call for a high amount of liquid and eggs to bind it together. Once the batter is mixed (hand mixer or stand mixer yields a much smoother result than a whisk!) let it sit for a couple of minutes as it will seem really runny. It needs a bit of time for the coconut flour to absorb the liquid and resemble a regular batter. Will definitely be ordering this again!!!
