Honeyville's Polydextrose is an economical synthetic form of glucose. It is used to replace sugar in products to make them sugar free, low fat and low in calories. Polydextrose can be part of a well-balanced, healthful diet while helping reduce calories and carbohydrates in prepared foods. This sweetener has been used safely in food for many years. The metabolism of polydextrose is similar to soluble fiber.

I mix low calorie flavored gelatin with plain gelatin to thicken the gelatin to hand holdable consistency. I add the polydextrose in to add fiber to the protein. This has two uses, we have a resident who is regularly constipated, but is reluctant to eat her vegetables, a natural source of dietary fiber. We have another resident who is on a ketogenic diet and needs to restrict carbohydrates. This is a sensible dessert, particularly when frozen blueberries are added for flavor, texture, and color variety. Both residents are eager eaters of the gelatin, neither is aware of the benefits (fiber for one, and low carbs for the other). except for the fact that the price has increased in the last 6 years this is an excellent source of fiber I use it along with oat fiber flour and rice bran flour to make a breakfast scone which keeps everything moving along I assume it does all that is expected for fiber in my diet since I am a healthy 70 year oldReview by helen (Posted on 3/24/2014)
