Dried Whole Eggs

I tried these in the 6-combo pack and decided to buy a case of them by themselves. Dried eggs work out well for us because we don't eat very many eggs. The last time we bought fresh eggs the last two in the 18-egg box were getting leathery inside before we cooked them. These eggs seem to work very well in baked goods and for eggnog. The proportions on the box work fine for baking and for flavor in eggnog the texture doesn't matter. I haven't been successful yet in getting decent scrambled eggs from them. They seem a bit too thin when they go into the skillet and when they hit the cooked stage they suddenly revert to granules plus water. The water I can live with. Falling into granules is not good. I stopped it a little short of that last time and they were better but not yet good enough. They just overall seem to lack body. I don't know if they have been too denatured by the drying process to ever recover or if I just need to add less water at the beginning. I am determined to keep trying though because this is the best way we can have eggs always available when needed.

Good product. Still experimenting with egg/water mix

I've been eating these for 2 weeks now. I still like them. However I'm still experimenting with best way to mix especially when I'm in a hurry. A blender works best but a pain for small amounts. I'll look for my old hand "hurdy gurdy" mixer like people used to use before electric ones. These eggs work best when mixed VERY thoroughly before hitting the pan for scrambled eggs the way **I** like them :) Still playing with mixing/cooking them to minimize the excess water when the eggs are cooked. I dump cooked eggs on a paper towel to blot up the water for now. Makes them MUCH better imo. So I still like the eggs. These eggs and milk replacer are a staple part of my emergency rations.

Professional Geek

A good product. Take the "90 large eggs" equivalent with a grain of salt but it does reconstitute to a good product. A suggestion though for eating straight: melt a tablespoon of butter per 3 or 4 egg equivalents and mix in before pouring into the pan - totally removes the 'soapbubbles' and adds a better mouthfeel to the final product. I'll be buying more we're going though our first 'test' can fairly fast. : )

Well received in Afghanistan

I had a chaplain request powdered eggs. It seems he bakes cakes for birthdays and other special occasions for the Marines he is with in Afghanistan. He was thrilled to receive an entire case of these eggs!

Not bad at all

I really had something in my head against powdered eggs and I can't say they smell great (although reg eggs don't either) but as against them as I was they are actually just like eating scrambled eggs. Don't be afraid of them! Taste just like any other scrambled eggs you make. I wondered whether restaurants use them after trying them. Can't beat this places shipping price!

Good Eggs

I've raised my rating because my experiment of mixing these with some of the dried egg whites very quickly made fantastically light scrambled eggs that would have made a great omelet if I'd had any stuffing handy. It is possible that waiting longer for them to reconstitute as suggested by another reviewer would make them better without the egg whites but if that is needed then the can should say so. At any rate the flavor was great and it seems that they will make good scrambled eggs one way or another.

Who knew?

Who knew that powdered eggs would cook up to look like the real thing? There is a slight flavor difference when eaten plain but dashes of salt and pepper make them delightful. I was very skeptical that they could even compare to fresh but seeing is believing. Applications: scrambled eggs while camping pasteurized eggnog and ease and speed when needing 2 dozen eggs to make freezer french toast.

I wish I've known earlier about Honeyville Farms

My wife and I love powdered eggs. Never thought we could buy them. We've looked and searched everywhere until a friend told us about Honeyville. It's better than real eggs. No more shells in my omlette. We don't have to buy a dozen at a time. Thank you
