Mixing if I remember right right it's about 2 to 1 ratio. You use boiling water. I understand about the clumps. I took my blender--I forget it's name. It's the single upright blender you put in a cup. Anyway I used that and mixed and whipped til everything was smooth. It only took a couple of minutes.
I haven't tried it over my ham and cheese fold over sandwiches. I just tried the ham and sausage both of which are great. I'll let you know later after I test this...
But do you use a blender or food processor to mix this up.

OMG - it's TERRIBLE! I was expecting (hoping for) something that would taste even remotely like processed cheese, like Velveeta, for example. I opened the can the day after I received it, so it is nowhere near its expiration date. The product looks fresh, but when it's mixed in hot water (doesn't mix very easily and clumps immediately) it tastes very 'stale' and old, and not very much like cheese at all. The color is extremely bright orange, and looks very artificial. I'm sure it's safe to eat but I will be hard-pressed to bring myself to pour it over any perfectly good food.
I'm uneasy about giving it a '1' rating for quality because it probably does have good 'food value', however, I must due to the terrible taste (none of us liked it).
