I tried a 5 lb bag to start exerimenting with gluten-free, low carb baking and have to say I'm very impressed with the results. Coconut flour is very dry so you'll find that recipes based on it call for a high amount of liquid and eggs to bind it together. Once the batter is mixed (hand mixer or stand mixer yields a much smoother result than a whisk!) let it sit for a couple of minutes as it will seem really runny. It needs a bit of time for the coconut flour to absorb the liquid and resemble a regular batter. Will definitely be ordering this again!!!Review by Healthy Chick (Posted on 2/17/14)
