Honeyville's Ranchers Cut Freeze Dried Scrambled Eggs are cooked and freeze dried, making them easy to prepare in minutes. Honeyvilles Freeze Dried Scrambled Eggs are produced in a process where moisture is removed from the product using a very low temperature and a vacuum. Only about 3 percent moisture remains in the product at the time of packaging. The end product weight is reduced by over 90 percent, while the volume stays the same. This remarkable process concentrates the fresh taste, natural color, and texture of scrambled eggs in its freeze dried state. Honeyville Ranchers Cut Freeze Dried Scrambled Eggs are an ideal product for long term food storage and emergency preparedness.

Shelf-Life:  Freeze Dried Scrambled Eggs will store for 10 to 15 years in a sealed #10 can (oxygen absorber included) under ideal storage conditions (cool, dry place).

Instructions:  Add 1/3 cup of boiling water to ½ cup of Freeze Dried Scrambled Eggs. Stir once, cover and let stand for 5 to 7 minutes. Drain off excess water and serve.

Uses:  Freeze Dried Scrambled Eggs can be used to make fluffy scrambled eggs or in any recipe calling for cooked eggs.

Packaging:  Freeze Dried Scrambled Eggs are sealed air tight in a #10 can and weighs approximately 1.25 pounds. A case contains 6 #10 cans and weighs 7.5 pounds. Each can contains 16 servings. One serving size is ½ cup. Once rehydrated, a serving size comes out to about ½ cup.

Ingredients:  Freeze-dried cooked scrambled eggs (liquid whole eggs, non-fat milk, soybean oil, modified food starch, salt, xanthan gum, citric acid, butter flavor (maltodextrin, natural butter flavor, annatto, and turmeric(for color)), pepper).

Great for Off-Grid if you use them properly

We're off-grid in the Alaskan bush and shelf-stable food is a daily use item. The Honeyville Scrambled Eggs are excellent when you want *scrambled eggs* and don't want to use up the more versatile Ova Easy Egg Crystals. They are slightly fragile, resulting in more breakage and dust; but we pass the whole can through a sieve and mix the dust and powder with mayo for egg salad sandwiches. The Scrambled Eggs are a bit difficult to rehydrate properly, and can be a bit chewy if not soaked in warm water or simmered for awhile beforehand.

Our favorite, non-breakfast uses are adding the Scrambled Eggs to ramen noodles or fried rice. They also make excellent breakfast tortillas with a little Sausage Crumbles or Ham Dices and a splash of salsa. It's a great way to get protein in the dish when you want a break from a meat.

It's a little spendy, but much more economical than running the generator to keep a freezer full of meat long term. And the taste and texture is MUCH better than trying to make scrambled eggs out of whole egg powder (better for baking) or Ova Easy (better for omelets and fritattas).

Review

First time trying freeze dried eggs. Not too impressed with the texture. Taste is ok when you add some seasoning. The texture is kind of "crunchy". I will experiment with them and see if I can change the texture at all.
