Shelf-Life: Freeze Dried Monterey Jack Cheese will store for 5 to 10 years in a sealed #10 can (oxygen absorber included) under ideal storage conditions (cool, dry place).
Instructions: Mix 1 tablespoon of monterey jack cheese to 2 tablespoons of warm water. Allow Freeze Dried Monterey Jack Cheese to hydrate for about 5 minutes or until fully rehydrated.

If you are looking for a cheese to put on top of a dish with plenty of moisture, this is an excellent choice. If you are looking to rehydrate and melt it in a dip, it takes special care. Tried to make a chili cheese dip with it and learned a few things. It won't melt and blend in as easily as fresh cheese in this case. It needs to be ground and stirred often during cooking with a binder (I used dry milk and cornstarch in water), in order for it to get a decent consistency. Other wise, the taste is excellent and works well in tex mex casseroles, saucy lasagnas, enchiladas, and similar dishes as is.Review by willy
