Honeyville's Alta Artisan Unbleached Flour is a high quality flour that's similar to a low-protein European style flour. It has less gluten, which helps create crisper crusts and irregular hole structures. This flour type is commonly used to make baguettes, croissants, rustic breads, donut bases and more. While the fiber and protein is low, it does contain high amounts of iron, which is important for red blood cells. Still as Impressed Three Years Later!

I have been buying this flour via Amazon for 3 years but I figure shopping direct gives the company just a little bit more profit, and, let's face it, for the price and $4.99 flat rate shipping this just can't be beat!.

We posted this review on the Amazon site 3 years ago, and there have been MANY more 5 star reviews since that time, so I thought I would repost it here. I would like to add that I think that the amazing fineness of the flour is at least partly responsible for the impressive results. The gluten develops very quickly, even with the quick, single rise program on my Zojirushi breadmaker, a wonderful item acquired two year's ago after my old machine died.

I have used the Artisan flour it in making cakes and pastry when I have run out of A/P, with great results. My only wish? That there was an ORGANIC Artisan bread flour, as I am aware that non-organic crops are often sprayed with Round-Up before harvest to kill all the green growth and hasten drying. I would pay the extra!

Review: "The 50 lbs bag arrived in just a few days.. $4.95 shipping is unbeatable. I bagged it n 1 gallon plastic bags and packed them into a large lard can to keep fresh.. the container is now in our root cellar. For my first loaf I tried a basic French Bread recipe that includes beaten egg whites added to the water.. no oil.. just flour, sugar, yeast, water, salt.. and, from 1lb 4 oz of flour I produced the most awesome, seriously authentic French style baguettes (x2) that I have EVER made! I have no idea what makes this unbleached flour so special, but I'm not looking back!"

Intense !!!

Tried this flour and I don't think I'll ever buy another. I use it for everything from my German Christmas Cookies to Italian Bread and mixed with Rye for a great Roggenbrot. Makes everything taste great from chewy crusted breads to specialty cookies. Can't beat the service, value or the products anywhere !!

More than just for bread

Yes, this flour is indicated for yeast breads and I make a lot of it, but every once in a while, I like to make cakes. I've bought cake flour before, and the small boxes would be a hatching ground for pantry moths before I could finish, so I am always reluctant to buy more. I've made plenty of cakes, pancakes, biscuits, and scones using this flour, and they have come out nicely, if anyone is wondering.

Best Bread Flour I have ever used!!

Not only did I get delivery 2 days after I placed my order for only $5.00 for a 50 pound bag which is absolutely unheard of in Today's Market but I noticed on my credit card bill the company gave me a $5.00 discount for no reason, WOW! I Baked some baguettes to immediately test this flour that everyone raves about and sure enough they turned out to be the most amazing baguettes I ever baked. The crust is amazing and the inside tasted so moist and chewy, exactly like another reviewer said, like 'bread cake'. This flour is truly amazing and for sure lives up to all the top notch reviews. I for sure will never again bake bread again unless I'm using this incredible flour. Thank you so much to the company!!!!!!

Just Love this Flour

I ordered this flour because it was on sale. What a find!!! We make all our own bread now and I recently went through the last of my flour. My husband brought home some flour from the grocery store and I made bread. The bread wasn't bad but it surely wasn't as good as with the Alta Artisan. My favorite part of using the Alta Artisan flour is the crunchy crust.

Awesome Flour

I bake a lot and was very impressed with this flour. I made the baguette recipe on the back of the small bag and it came out perfectly. Crisp crust and great inside. I now have bought the 50 lb. bag and can't wait to use it on my other breads and pizza dough.

Work great on my breads

I make sourdough breads I also have a couple cultures I bake with ,and this alta flour explodes in my brick oven spring its just unbelievable ,Great product ,shipping is good too can,t beat the price .I have tried all different kinds of flour but this is a keeper

Great product

This is a great product my breads taste wonderfuland always bake up golden brown. I started to order the flour through amazon and now will order with honeyville site. If you have been thinking about trying this flour you will not regret switching...Honeyville makes a wonderful product!

Best Tasting Flour Hands Down

I got into bread baking last fall with no-kneads. Then bought Peter Reinhart's book to move to the next level. I started out with King Arthur bread flour but thought there might be something better out there and did some research bringing me to Honeyville. The reviews sold me on Alta Artisan. (Honeyville says that this is lower gluten but their analysis says 12% protein which is high gluten bread flour....go figure?) I can't say that I noticed a performance difference. Bread is tricky and technique is everything but I can tell you that the flavor of my breads has improved dramatically. This is just the best tasting flour out there. I bake a pain de mie every week. It tastes so good that we call it "bread cake". Yumm.
